Adds deploy/compose.yml: the API's runtime contract (image, container name, every variable it reads) for the server's two-layer compose scheme.

On the server, deploy.sh now copies this file and .env.example out of the image on each deploy, diffs the app layer against the host copy, and aborts before up when a required variable from .env.example is not passed to the container. Host specifics (ports, networks, volume paths) stay in the server's compose.host.yml.

From now on: a new env var goes into .env.example and this file; a new mount is documented here and the host adds the path. No Dockerfile change needed — COPY . . already ships deploy/ and .env.example.
